Nutritious foods, malnourished children: Researchers explore hidden nutrition gap in Saboba
Communities in northern Ghana may be sitting on a rich supply of nutritious local foods without getting the full health benefit from them. A food science team from the Kwame Nkrumah University of Science and Technology has been working in the Saboba District of the Northern Region. Their work points to a puzzling contradiction: households live among locally available foods that are genuinely nourishing, yet children in the district still show signs of malnutrition. The team believes the gap comes from limited knowledge about how to prepare these foods and how to combine them into balanced meals. Lacking that know-how, families end up underusing ingredients or cooking them in ways that strip away their value. The researchers are now identifying which local foods could make the biggest difference if their worth were better understood. Their findings suggest that education around food preparation can matter as much as the food itself in fighting child malnutrition. The team hopes the work will guide programs aimed at closing this hidden nutrition gap in Saboba.
